  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot brewed coffee
  • ½ tsp chili powder (optional)
  • 1 tsp lime zest (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line bottoms with parchment paper.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt until no lumps remain.
  3. In a separate bowl, whisk eggs, buttermilk, oil, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and mix on low speed or with a spatula until just combined. Do not overmix.
  5. Carefully pour in hot brewed coffee and stir gently until the batter is smooth and liquidy.
  6. Divide batter evenly between prepared pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  8. Let cakes cool in pans for 10 minutes, then turn out onto a cooling rack to cool completely.
  9. Wrap cooled layers tightly in plastic wrap. Store at room temperature for up to 2 days or freeze for up to 3 months.

Notes
