Ingredients
Scale
- 3 ½ cups (420g) All-Purpose Flour
- ½ cup (100g) Granulated Sugar
- 1 packet (2 ¼ tsp) Active Dry Yeast
- 1 cup (240ml) Warm Milk (110°F/43°C)
- ¼ cup (57g) Unsalted Butter, melted
- 2 Large Eggs, room temperature
- 1 tsp Salt
- 1 tsp Vanilla Extract
- 1 cup (120g) Confectioners’ Sugar, sifted
- 2–3 tbsp Fresh Lemon Juice
- 1 tsp Orange Zest
- 1–2 tbsp Milk (for glaze consistency)
- 1 Egg (for egg wash)
Instructions
- Activate the yeast: In a small bowl, combine warm milk and sugar. Sprinkle yeast over the top and let sit for 5-10 minutes until foamy.
- Mix the dough: In a large bowl, combine flour and salt. Add melted butter, eggs, vanilla, and the yeast mixture. Mix on low speed until a shaggy dough forms.
- Knead the dough: Knead for 5-7 minutes until smooth and elastic, passing the windowpane test.
- First rise: Place dough in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours until doubled in size.
- Shape the rolls: Punch down dough, roll into a rectangle, and cut into 12 equal squares. Roll each square into a ball, tucking edges underneath.
- Second rise: Place balls in a greased 9×13 inch pan. Cover and let rise for 30-45 minutes until puffy and touching.
- Bake: Preheat oven to 350°F (175°C). Brush tops with egg wash. Bake for 15-18 minutes until golden brown and internal temperature reaches 190°F (88°C).
- Make the glaze: While rolls bake, whisk confectioners’ sugar, lemon juice, orange zest, and milk until drizzling consistency.
- Glaze: Brush glaze over hot rolls immediately after removing from oven. Let cool in pan for 10 minutes before serving.
Notes
Ensure yeast is fresh and foams before proceeding. Do not over-knead after the second rise. Apply glaze while rolls are hot for best adhesion. If kitchen is cold, place dough in an oven with the light on to rise. Internal temperature should reach 190°F (88°C).
