Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 2 tablespoons extra virgin olive oil (divided)
  • 1/2 cup fresh lemon juice
  • 1/4 cup fresh dill, finely chopped
  • 12 cloves garlic, minced
  • 1 teaspoon maple syrup or honey
  • 1/2 teaspoon Dijon mustard
  • 4 cups mixed greens, spinach, or arugula
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1 avocado, sliced
  • 1/2 cup cooked quinoa or farro (optional)

Instructions

  1. Pat chicken breasts dry and season both sides with salt, pepper, and garlic powder.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  3. Cook chicken for 6-7 minutes per side until internal temperature reaches 165°F (74°C). Remove and let rest for 5 minutes.
  4. While chicken rests, whisk together lemon juice, minced garlic, chopped dill, maple syrup, Dijon mustard, salt, and pepper in a small bowl.
  5. Slowly drizzle in remaining 1 tablespoon olive oil while whisking to emulsify the dressing.
  6. Dice cucumber, halve tomatoes, and slice red onion. Chop dill if not already done.
  7. Assemble bowls with greens or grains, topped with sliced chicken, vegetables, and avocado.
  8. Drizzle generously with lemon dill dressing and serve immediately.

Notes

For meal prep, store chicken, veggies, and dressing separately to keep greens crisp. The dressing can be made up to a week in advance. If using canned chicken, drain and rinse before adding. For a vegetarian option, substitute chicken with chickpeas or grilled tofu.
