Ultimate Moist Birthday Cake: The Heat That Finishes The Dish

  • Author: jonathan_evans
  • Total Time: 50 minutes
  • Yield: 12 servings 1x

Description

A rich, incredibly moist birthday cake that balances sweetness with a subtle kick of cayenne or chili, ensuring a tender crumb and complex flavor profile.

Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter, softened to room temperature
  • 4 large eggs, room temperature
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper or chili powder
  • Zest of one lemon or orange (optional)
  • Heavy cream, powdered sugar, and vanilla for frosting
  • Chili-infused simple syrup or hot sauce for frosting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease three 8-inch cake pans, dust with flour, and line bottoms with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cayenne pepper.
  3. In a large bowl, beat softened butter and granulated sugar on medium-high speed for 3-4 minutes until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then add vanilla extract.
  5. Reduce mixer speed to low. Add dry ingredients in three parts, alternating with buttermilk in two parts, starting and ending with dry ingredients. Mix just until combined.
  6. Divide batter evenly among prepared pans.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cakes cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
  9. Level tops if necessary and frost with desired frosting (e.g., vanilla buttercream with a spicy kick) when cakes are completely cool.

Notes

Ensure all ingredients are at room temperature for best emulsion. Do not overmix the batter to avoid a tough texture. The spice should be subtle; start with a pinch of cayenne. Cakes can be baked a day ahead and stored wrapped at room temperature.
