Description

A vibrant and fresh meal prep bowl featuring seared shrimp, ripe mango, and creamy avocado over fluffy rice, dressed with a zesty lime-cilantro vinaigrette. It is quick to make, nutritious, and holds up well in the fridge for up to 4 days.

  • 1 pound large shrimp, peeled and deveined
  • 2 cups cooked jasmine or basmati rice
  • 1 large ripe mango, diced
  • 2 large avocados, sliced
  • 1/2 small red onion, thinly sliced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • Juice of 2 fresh limes
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup fresh cilantro, chopped
  • 1 teaspoon honey

Instructions

  1. Cook the rice according to package directions. Fluff with a fork and let cool to room temperature to prevent mushiness.
  2. Dice the mango and slice the red onion. Slice the avocados last to prevent browning and store in an airtight container with a paper towel to absorb moisture.
  3. Pat the shrimp dry with paper towels. Toss with garlic powder, onion powder, salt, and pepper until evenly coated.
  4. In a small jar, combine lime juice, olive oil, honey, and chopped cilantro. Seal tightly and shake vigorously to emulsify the dressing.
  5. Heat a large skillet over medium-high heat with a splash of oil. Add shrimp in a single layer and cook for 2-3 minutes per side until pink and opaque. Remove from heat immediately.
  6. Divide the cooled rice among meal prep containers. Top with shrimp, mango, red onion, and avocado. Drizzle with dressing just before eating or store on the side.

Notes

Do not overcook the shrimp as they become rubbery quickly. Keep avocado slices separate or add fresh lime juice to prevent browning. Store dressing separately to keep the rice from getting soggy. This recipe is naturally gluten-free and dairy-free. For a low-carb option, substitute rice with cauliflower rice.
