Tropical Pineapple Coconut Mocktail: Zesty 2-Ingredient Punch

  • Author: jonathan_evans
  • Total Time: 5 minutes
  • Yield: 1 serving 1x

Description

A refreshing, creamy, and zesty non-alcoholic drink made with just pineapple juice and coconut milk. This mocktail is quick to prepare, naturally vegan, and perfect for hot days or pool parties.

Ingredients

Scale
  • 1/2 cup 100% pure pineapple juice
  • 1/2 cup full-fat coconut milk (shaken well)
  • Ice cubes (large cubes preferred)
  • 1 tablespoon fresh lime juice (optional)
  • Pineapple wedge or mint sprig for garnish

Instructions

  1. Fill your serving glass with ice and chill if possible.
  2. Pour pineapple juice and well-shaken coconut milk into a cocktail shaker.
  3. Add lime juice if using.
  4. Fill the shaker with ice cubes and let sit for 10 seconds to cool the shaker walls.
  5. Seal the shaker tightly and shake vigorously for 15-20 seconds until frothy.
  6. Strain the mixture into the prepared glass over fresh ice.
  7. Garnish with a pineapple wedge or mint sprig and serve immediately.

Notes

Ensure the coconut milk is shaken well before opening to mix the cream and water. Shake the drink vigorously to create a creamy, frothy texture. If the drink separates after pouring, give it a quick stir. For a spicy variation, add fresh jalapeño slices. For a frozen version, freeze pineapple juice into ice cubes and blend.
