  • 1/2 cup plain dried breadcrumbs
  • 1 small yellow onion, finely diced
  • 1 large egg
  • 1 tsp Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 1 lb Cremini or white mushrooms, sliced
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups low-sodium beef broth
  • 1 tsp dry Worcestershire sauce
  • 1/2 tsp dried thyme

Instructions

  1. In a large mixing bowl, combine ground beef, diced onion, breadcrumbs, egg, Worcestershire sauce, garlic, salt, and pepper. Mix gently with hands until just combined.
  2. Divide meat into four equal portions and shape into oval patties about one inch thick. Make a slight indentation in the center of each patty.
  3. Heat a large skillet over medium-high heat with a tablespoon of oil. Sear patties for 3-4 minutes on the first side until browned, then flip and sear for another 3 minutes. Remove patties and set aside.
  4. Reduce heat to medium. Add butter to the same skillet. Once melted, add sliced mushrooms and cook for 5-7 minutes until browned and liquid has evaporated. Season with a pinch of salt and pepper.
  5. Sprinkle flour over the cooked mushrooms and stir constantly for one minute to create a roux.
  6. Slowly pour in beef broth while whisking constantly to prevent lumps. Add Worcestershire sauce and thyme. Simmer for 3-5 minutes until gravy thickens.
  7. Return seared patties to the skillet, nestling them into the gravy. Cover and simmer on low heat for 5-7 minutes to finish cooking the beef.
  8. Check seasoning and serve hot over mashed potatoes, egg noodles, or rice.

Notes

Do not overwork the meat mixture to keep patties tender. Ensure mushrooms are fully browned before adding flour to avoid a pasty gravy. If gravy is too thick, add more broth; if too thin, simmer longer. For best results, serve immediately.
