- 1 pound prawns (shrimp), peeled and deveined
- 1 tablespoon vegetable oil (for shrimp)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 cup mayonnaise
- 1 to 2 tablespoons sriracha sauce
- 1 tablespoon lime juice
- 1 teaspoon sesame oil
- 1/2 teaspoon sugar
- 2 cups cooked rice (Jasmine or short-grain)
- 1 large avocado, sliced
- 1/2 cup cucumber, julienned or sliced
- 1/4 cup red onion, thinly sliced
- 2 stalks green onions, chopped
- 1 tablespoon sesame seeds, toasted
- A handful of cilantro leaves
Instructions
- Cook the rice according to package directions, fluff with a fork, and set aside.
- In a small bowl, whisk together mayonnaise, sriracha, lime juice, sesame oil, and sugar until smooth. Taste and adjust seasoning if needed. Set aside.
- Slice the avocado, cucumber, and red onion. Chop the green onions and cilantro.
- Pat the shrimp dry with paper towels. Toss with vegetable oil, salt, pepper, and garlic powder to coat evenly.
- Heat a skillet over medium-high heat. Add shrimp in a single layer (cook in batches if necessary). Cook for 2-3 minutes per side until pink and opaque. Remove from heat.
- Place warm rice in the center of wide bowls. Arrange shrimp, avocado, cucumber, and red onion around the rice.
- Drizzle spicy mayo generously over the bowl. Sprinkle with sesame seeds, green onions, and cilantro. Serve immediately.
Notes
Dry shrimp thoroughly before cooking to ensure a good sear and prevent steaming. Do not overcook shrimp; they are done when they form a loose ‘C’ shape. For meal prep, store components separately and assemble just before eating to maintain texture. Use fresh lime juice for best flavor.
