Instructions

  1. In a medium mixing bowl, combine ground beef, diced onion, breadcrumbs, beaten egg, milk, Worcestershire sauce, garlic powder, onion powder, salt, pepper, and dried parsley. Mix gently with hands until just combined; do not overmix.
  2. Divide the mixture into four equal portions and shape into flat patties about one inch thick. Make a slight indent in the center of each patty with your thumb to prevent puffing.
  3. Heat a cast iron skillet over medium-high heat and add oil. Heat until shimmering but not smoking.
  4. Sear patties in the hot skillet for 3-4 minutes on the first side until a deep brown crust forms. Cook in batches if necessary to avoid crowding.
  5. Flip patties and cook for another 3-4 minutes on the second side, or until internal temperature reaches 160°F (71°C).
  6. Transfer cooked steaks to a clean plate and cover loosely with foil. Do not clean the pan.
  7. Reduce heat to medium. Pour off excess grease, leaving about a tablespoon of fat. Add butter and melt.
  8. Sprinkle flour over the butter and whisk constantly for 1-2 minutes until the mixture turns light golden brown.

  11. Return hamburger steaks to the skillet, nestling them into the gravy. Simmer for 1-2 minutes to absorb flavors.
