Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×9 inch baking dish.
  2. In a medium bowl, combine blueberries, 1 cup sugar, cornstarch, lemon juice, lemon zest, vanilla, and salt. Toss to coat and let sit for 10 minutes.
  3. In a separate bowl, whisk together flour, 1 cup sugar, baking powder, baking soda, and salt.
  4. In a third bowl, whisk milk and melted butter together.
  5. Pour wet ingredients into dry ingredients and stir gently with a spatula just until combined; do not overmix.
  6. Pour the blueberry mixture into the prepared baking dish.
  7. Spoon dollops of batter over the top of the berries, leaving some berries exposed.
  8. Bake for 45-50 minutes until the topping is golden brown and filling is bubbling vigorously.
  9. If browning too fast, cover loosely with foil for the last 10 minutes.
  10. Let cool for at least 15 minutes before serving to allow filling to set.

Notes

Do not thaw frozen blueberries before using to prevent a soupy filling. Ensure baking powder and soda are fresh for proper rise.
