  • 34 lbs Beef Chuck Roast
  • 3 large Yellow Onions, thinly sliced
  • 1 cup Beef Broth (low-sodium)
  • 1 packet Dry Onion Soup Mix
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Brown Sugar
  • 3 cloves Garlic, minced
  • 1 tsp Dried Thyme
  • 1 tsp Black Pepper
  • 2 tbsp Butter (optional, for finishing)

Instructions

  1. Peel and thinly slice the yellow onions into ribbons.
  2. Pat the chuck roast dry and season all sides generously with salt and black pepper.
  3. Place half of the sliced onions on the bottom of a 6-quart slow cooker insert.
  4. Place the seasoned beef roast on top of the onion bed.
  5. Pour beef broth over the meat, then sprinkle dry onion soup mix, minced garlic, dried thyme, and brown sugar evenly over the top.
  6. Drizzle Worcestershire sauce around the sides and top of the meat.
  7. Top with the remaining sliced onions.
  8. Cover and cook on Low for 8 hours (or High for 4-5 hours) until meat is fork-tender.
  9. Optional: If sauce is too thin, remove meat and onions, mix 1 tbsp cornstarch with 2 tbsp cold water, stir into liquid, and cook on High for 15-20 minutes to thicken.
  10. Remove meat and shred with two forks. Stir in butter if using. Serve with sauce spooned over the top.

Notes

For best results, use a fatty cut like chuck roast to keep the meat moist. Searing the meat first is optional but adds complexity. If using a smaller 4-quart cooker, reduce onion quantity or roast size. Ensure onion soup mix and Worcestershire sauce are certified gluten-free if needed. The flavors improve overnight.
