Description
A tender, slow-cooked chuck roast served with a bright, tangy gravy made with apple cider vinegar and lemon juice. This easy 5-ingredient meal is perfect for busy weeknights and delivers bold flavor without the heaviness of traditional stews.
Ingredients
- 3–4 lbs Chuck Roast
- 1 large Yellow Onion, sliced into thick wedges
- 2 cups Beef Broth (low-sodium recommended)
- 2 tbsp Apple Cider Vinegar
- 1 tbsp Fresh Lemon Juice
- 1 tsp Garlic Powder
- 1 tsp Dried Thyme
- 1 Bay Leaf
- 1 tbsp Butter
- 1 tbsp Flour (or cornstarch for gluten-free)
- Salt and Pepper to taste
Instructions
- Pat the chuck roast dry with paper towels. Season generously with salt, pepper, and garlic powder.
- Place the sliced onions at the bottom of the slow cooker to act as a rack.
- Place the seasoned roast on top of the onions.
- Pour the beef broth over the roast. Stir in the apple cider vinegar, lemon juice, dried thyme, and bay leaf.
- Cover and cook on LOW for 8 hours or HIGH for 4-5 hours, until the meat is fork-tender.
- Remove the roast from the pot and tent with foil to keep warm.
- In a small bowl, whisk together the butter and flour to form a paste.
- Whisk the butter-flour paste into the hot liquid in the slow cooker.
- Cook on HIGH for 15-20 minutes, uncovered, until the gravy thickens. Taste and adjust seasoning with more vinegar if needed.
- Remove the bay leaf. Slice the roast against the grain and serve with the tangy gravy.
Notes
For best results, slice the roast against the grain to ensure tenderness. If using fresh garlic instead of powder, use 2 cloves minced and add in the last hour of cooking. The gravy can be thickened with cornstarch mixed with water for a gluten-free version. Leftovers store well in the fridge for up to 4 days or freeze for up to 3 months.
