  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch strips
  • 3 large bell peppers (red, green, yellow), sliced into half-moons
  • 1 large yellow onion, sliced into half-moon strips
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fajita seasoning (cumin, paprika, garlic powder, onion powder, salt, pepper)
  • Salt and black pepper to taste
  • Optional toppings: Shredded cheese, sour cream, fresh cilantro, salsa, warm tortillas

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Pat chicken breasts dry and cut into 1-inch strips. Place in a large bowl, drizzle with 1 tablespoon olive oil and half the seasoning, then toss to coat.
  3. Slice bell peppers and onions into half-moon strips. Place in a separate bowl, add remaining 2 tablespoons olive oil, remaining seasoning, and lime juice. Toss to coat.
  4. Line a half-sheet pan (18×13 inches) with parchment paper or foil. Spread vegetables in a single layer.
  5. Arrange chicken strips over the vegetables, keeping them somewhat separate for even cooking.
  6. Roast for 15-20 minutes, shaking or stirring the pan at the 10-minute mark.
  7. Check that chicken internal temperature reaches 165°F (74°C).
  8. Let rest for 2-3 minutes before serving with warm tortillas and toppings.

Notes

Do not overcrowd the pan to prevent steaming; vegetables should be in a single layer. Ensure chicken pieces are uniform in size for even cooking. If edges brown too quickly, tent loosely with foil. Chicken thighs can be used as a substitute but may require 2-3 extra minutes of cooking time.
