  • 1 teaspoon fresh lemon juice (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or grease lightly.
  2. Wash and dry zucchini thoroughly. Slice into 1/4-inch rounds or half-moons, ensuring consistent thickness. Place in a large mixing bowl.
  3. Whisk together olive oil, minced garlic (or prepare whole cloves), 1/2 teaspoon Kosher salt, and 1/4 teaspoon black pepper.
  4. Pour the garlic oil mixture over the zucchini and toss until evenly coated. Scatter whole garlic cloves over the top if using.
  5. Spread zucchini in a single layer on the baking sheet. Roast for 15 minutes until tender with golden-brown edges.
  6. Remove pan from oven. Sprinkle grated Parmesan evenly over the hot zucchini. Return to oven for 3-5 minutes until cheese is melted, bubbly, and slightly crispy.
