A balanced dessert featuring velvety dark chocolate mousse and a tart raspberry layer, designed to cut through the richness with bright acidity.
Ingredients
- Dark Chocolate (70% cocoa), high-quality bar, chopped
- Heavy Whipping Cream, cold
- Large Eggs, separated (use pasteurized if concerned)
- Unsalted Butter, softened
- Vanilla Extract, pure
- Salt, flaky sea salt
- Fresh Raspberries
- Raspberry Jam or Preserves, seedless or seed-on
- Lemon Juice, fresh
- Simple Syrup (sugar and water)
- Chocolate Cookie Crumbs (Oreos or digestive biscuits)
- Melted Butter
Instructions
- Crush chocolate cookies into fine crumbs and mix with melted butter until moist. Press firmly into the bottom of an 8-inch springform pan and refrigerate for 15 minutes.
- Chop dark chocolate and melt gently in a heatproof bowl over simmering water. Stir until smooth, then let cool to lukewarm (about 10 minutes).
- Whip cold heavy cream in a large bowl until soft peaks form. Set aside.
- Whip egg whites with a pinch of salt in a clean bowl until stiff, glossy peaks form.
- Stir softened butter and vanilla into the cooled chocolate. Lighten the chocolate by stirring in one-third of the whipped cream, then gently fold in the remaining cream. Finally, gently fold in the egg whites.
- Puree raspberries with jam, lemon juice, and simple syrup. Strain through a fine-mesh sieve to remove seeds.
- Pour chocolate mousse over the chilled cookie base and smooth the top. Freeze for 30 minutes to set slightly.
- Pour the raspberry puree over the set chocolate layer and smooth carefully. Freeze for at least 4 hours or overnight.
- Run a warm knife around the edge, remove the springform sides, and slice with a clean, hot knife. Garnish with fresh raspberries and mint.
Notes
Ensure chocolate is cooled to lukewarm before adding to cream to prevent melting. Strain raspberry puree for a smooth texture. Use cold bowls for whipping cream. Do not reheat; serve chilled. Can be made ahead and frozen for up to 1 month.
