Description

A creamy, bold, and irresistible weeknight pasta dish featuring seared ribeye steak tossed in a rich horseradish and Dijon mustard butter sauce.


Ingredients

  • 1 lb Ribeye or New York strip steak, cut into thin strips against the grain
  • 1 lb Fettuccine or Penne pasta
  • 45 cloves Fresh garlic, minced
  • 1 medium Shallot, finely diced
  • Unsalted butter
  • Prepared horseradish (refrigerated section)
  • Dijon mustard
  • Heavy cream
  • Parmesan cheese, freshly grated
  • Fresh parsley and chives, chopped
  • Kosher salt and freshly cracked black pepper
  • Olive oil

Instructions

  1. Take steak out of fridge 20 minutes before cooking. Pat dry and season generously with salt and pepper.
  2. Heat a large skillet (preferably cast-iron) over medium-high heat with olive oil. Sear steak for 2-3 minutes per side for medium-rare. Remove to a plate and let rest.
  3. While steak rests, bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1 cup of pasta water before draining.
  4. In the same skillet, reduce heat to medium. Add butter, shallots, and cook until soft (2 mins). Add garlic and cook for 30 seconds until fragrant.
  5. Pour in heavy cream and bring to a gentle simmer. Whisk in Dijon mustard and horseradish. Simmer for 2 minutes to thicken.
  6. Gradually whisk in parmesan cheese until melted and smooth. Add splash of pasta water if sauce is too thick.
  7. Slice rested steak into thin strips. Add steak and drained pasta to the skillet with the sauce. Toss to combine.
  8. Add chopped fresh herbs, toss again, and adjust seasoning with salt and pepper. Serve immediately.

Notes

Do not overcrowd the pan when searing the steak; cook in batches if necessary. Always reserve pasta water to help bind the sauce. Let the steak rest before slicing to retain juices. For a lighter option, swap heavy cream for half-and-half or use gluten-free pasta.
