- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 teaspoon cornstarch
- 1 teaspoon Shaoxing wine (or dry sherry)
- 1 teaspoon vegetable oil (for marinade)
- 4 heads baby bok choy, washed and dried
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, minced
- 1 tablespoon oyster sauce (or mushroom sauce for vegetarian)
- 1 teaspoon toasted sesame oil
- 1/2 teaspoon sugar
- 1/4 teaspoon white pepper
- 1 tablespoon neutral oil (for cooking)
Instructions
- Slice the flank steak against the grain into thin strips. In a bowl, mix the beef with soy sauce, cornstarch, Shaoxing wine, and vegetable oil. Let sit while prepping vegetables.
- Wash and dry the baby bok choy thoroughly. If large, cut in half lengthwise. Mince garlic and ginger.
- In a small bowl, whisk together oyster sauce, sesame oil, sugar, and white pepper. Set aside.
- Heat a wok or large skillet over high heat. Add neutral oil and swirl to coat. Wait until oil shimmers.
- Add beef to the pan in a single layer. Sear for 1-2 minutes without moving, then toss until just cooked through. Remove beef and set aside.
- Add a little more oil if needed. Stir-fry garlic and ginger for 30 seconds until fragrant. Add bok choy and stir-fry for 2-3 minutes until stems are tender-crisp.
- Return beef to the pan. Pour sauce over everything and toss quickly until sauce thickens and coats ingredients (about 30 seconds).
- Serve immediately over steamed rice or noodles, garnished with sesame seeds or green onions if desired.
Notes
Ensure beef is sliced against the grain for tenderness. Dry bok choy thoroughly to prevent steaming. Cook beef in batches if necessary to avoid overcrowding. Do not freeze leftovers as bok choy becomes watery.
