Description
A bright, punchy, and naturally sweetened tropical drink that balances the sweetness of pineapple with the crisp freshness of cucumber and lime. This healthy, hydrating beverage is perfect for summer heatwaves and takes less than 10 minutes to prepare.
Ingredients
- 4 cups fresh pineapple chunks (~600g)
- 1 large English cucumber (~300g)
- 2–3 fresh limes (juiced, approx. 3–4 tablespoons)
- 4–6 cups cold filtered water
- 2–4 tablespoons honey or agave (optional)
- 1/2 cup fresh mint leaves (~15g)
- Ice cubes (as needed)
Instructions
- Prep the produce by peeling and chopping the cucumber and pineapple into rough chunks. Lightly muddle the mint leaves in the bottom of the blender jar.
- Add the pineapple, cucumber, and mint to a high-speed blender. Blend on high for 30-60 seconds until completely smooth.
- Optional: Strain the mixture through a fine-mesh strainer into a large pitcher, pressing on the pulp to extract liquid. Discard the pulp.
- Stir in the fresh lime juice and honey (if using). Taste and adjust with more water, lime, or sweetener as needed.
- Fill glasses with ice cubes, pour the agua fresca over the ice, and garnish with lime slices or mint. Serve immediately.
Notes
Use ripe pineapple for maximum sweetness. If using frozen pineapple, ensure it is completely thawed. For a smoother texture, strain the mixture. The drink is best served immediately but can be stored in the fridge for up to 2 days. Add a pinch of salt to enhance flavors.
