  • 1.5 lbs beef tips (pre-cut chuck or sirloin)
  • 12 oz wide egg noodles
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup heavy cream
  • ½ cup sour cream
  • 1 tsp dried parsley
  • 1 tsp dried thyme
  • Salt and black pepper to taste

Instructions

  1. Pat beef tips dry with paper towels and season generously with salt and pepper.
  2. Heat butter in a large 12-inch skillet over medium-high heat. Sear beef tips in a single layer for 2-3 minutes per side until golden brown. Remove beef to a plate.
  3. In the same skillet, sauté minced garlic for 30 seconds until fragrant, being careful not to burn it.
  4. Pour in beef broth to deglaze the pan, scraping up brown bits from the bottom. Simmer for 2 minutes to reduce slightly.
  5. Add dry egg noodles to the skillet, stirring to coat in the broth mixture. Cover and simmer on medium-low heat for 8-10 minutes, stirring occasionally, until noodles absorb the broth.
  6. Stir in heavy cream and simmer for another 2 minutes until the sauce begins to thicken.
  7. Remove skillet from heat. Stir in sour cream, dried parsley, and thyme. Return seared beef to the pan and toss to coat everything in the creamy sauce.
  8. Taste and adjust seasoning if needed. Serve immediately, garnished with fresh parsley if desired.

Notes

Do not overcrowd the pan when searing beef to ensure proper browning. Lower heat before adding dairy to prevent curdling. If the sauce is too thick, add a splash of broth or water. If too thin, simmer uncovered. Leftovers store in the fridge for up to 3 days; freezing is not recommended as noodles may become mushy.
