  • 1 pound smoked sausage (Andouille, Kielbasa, or Chorizo), sliced into half-moons
  • 1 medium head green cabbage, chopped into bite-sized pieces
  • 1 medium yellow onion, diced
  • 34 cloves garlic, minced
  • 1 red or green bell pepper, sliced (optional)
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon brown sugar
  • Freshly cracked black pepper, to taste
  • Red pepper flakes, optional for heat
  • 1 tablespoon oil (if using lean sausage)

Instructions

  1. Prep ingredients: Slice sausage, chop cabbage, dice onion, mince garlic, and whisk together soy sauce, rice vinegar, brown sugar, and pepper in a small bowl.
  2. Heat a large skillet (cast iron or non-stick) over medium-high heat. Add sausage in a single layer and sear for 2-3 minutes until browned. Flip and cook for 1 more minute. Remove sausage and set aside, leaving rendered fat in the pan.
  3. Reduce heat to medium. Add diced onion to the pan and cook for 2-3 minutes until softened. Add garlic and bell pepper (if using) and cook for 1 minute, stirring constantly to avoid burning.
  4. Add chopped cabbage to the pan. Toss with onions and sausage fat. Cover with a lid and cook for 5 minutes to steam. Remove lid and cook for another 5 minutes, stirring occasionally, until cabbage is tender-crisp and browned.
  5. Return sausage to the pan. Pour the sauce mixture over everything and toss to coat. Cook for 1-2 minutes to meld flavors. Taste and adjust seasoning. Serve immediately.

Notes

Do not skip searing the sausage to create a flavorful crust. Ensure cabbage pieces are cut uniformly for even cooking. If using lean sausage, add a splash of oil. For a spicy kick, add jalapeño or gochujang. Leftovers store in the fridge for up to 4 days.
