A refreshing, low-carb fruit salad combining crisp watermelon, tangy feta cheese, fresh mint, and lime juice. This keto-friendly snack is quick to prepare, hydrating, and perfect for hot summer days.

- 4 cups seedless watermelon, diced into 1-inch cubes
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh mint leaves, finely chopped
- 1 tablespoon fresh lime juice
- 1 teaspoon extra virgin olive oil (optional)
- 1 pinch flaky sea salt
- 1 pinch freshly cracked black pepper
Instructions
- Wash the watermelon and slice off the ends. Stand upright and slice off the rind, then cut the flesh into 1-inch cubes. Place cubes in a large mixing bowl.
- Crumble the feta cheese into small pieces, roughly the size of a pea, and set aside.
- Rinse and dry the mint leaves. Stack them, roll into a cylinder, and slice thinly into ribbons (chiffonade). Add to the bowl with the watermelon.
- Squeeze fresh lime juice over the fruit and mint. Drizzle with olive oil and sprinkle with sea salt and black pepper.
- Gently toss the ingredients together to coat lightly without bruising the watermelon.
- Cover and refrigerate for at least 10 minutes to chill and allow flavors to meld.
- Give a final gentle toss before serving immediately.
Notes
Watermelon releases water over time, so dress the salad just before serving to prevent sogginess. For meal prep, keep the dressing separate and toss right before eating. Do not freeze this salad as the texture will become mushy. If using canned watermelon, rinse thoroughly to remove syrup.
