Ingredients

  • 1 lb (450g) sirloin or flank steak
  • 1 cup dry jasmine or basmati rice
  • 1.5 cups water (for rice)
  • 1/4 cup (60ml) low-sodium soy sauce
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp (30ml) fresh lime juice
  • 1 tsp sesame oil
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots), chopped
  • 1 large avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • Cooking oil for skillet

Instructions

  1. Rinse 1 cup of rice and cook with 1.5 cups of water according to package instructions. Let fluff with a fork once done.
  2. In a small bowl, whisk together soy sauce, minced garlic, grated ginger, lime juice, and sesame oil to create the marinade.
  3. Slice the steak against the grain into thin strips. Place in a bowl, pour marinade over, and toss to coat. Let sit for 10-15 minutes.
  4. Chop vegetables into uniform sizes while the steak marinates.
  5. Heat a skillet over high heat with a splash of oil. Add steak in a single layer (do not crowd) and cook for 1-2 minutes per side until browned. Remove and set aside.
  6. In the same pan, sauté vegetables for 3-4 minutes until tender-crisp. Remove from heat.
  7. Divide rice among containers. Top with steak and vegetables. Add sliced avocado and fresh cilantro. Drizzle with extra marinade if desired.

Notes

Slice steak against the grain for tenderness. Do not overcrowd the pan when searing steak to ensure a good crust. Store components separately if possible to keep rice fluffy and veggies crisp. Avocado should be added fresh or treated with lime juice to prevent browning. Lasts up to 4 days in the refrigerator.
