  • 1/2 cup soy sauce
  • 1/2 cup pineapple juice

  • 1 tablespoon rice vinegar
  • 1 small red onion, thinly sliced
  • 2 tablespoons rice vinegar (for pickling)
  • Pinch of salt (for pickling)
  • Vegetable oil (for grilling)

Instructions

  1. In a medium bowl, whisk together 1/2 cup soy sauce, 1/2 cup pineapple juice, 1 tablespoon grated ginger, 2 minced garlic cloves, 1 tablespoon sugar, and 1 tablespoon rice vinegar until the sugar is dissolved.
  2. Place chicken thighs in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is coated. Seal and massage the marinade into the meat.
  3. Refrigerate the chicken for at least 30 minutes, or up to 4 hours. Do not exceed 4 hours to prevent the meat from becoming mushy.
  4. While the chicken marinates, place thinly sliced red onion in a small bowl with 2 tablespoons rice vinegar and a pinch of salt. Mix and let sit for 10 minutes to pickle. Drain excess liquid before using.
  5. Preheat grill to medium-high heat (400°F-450°F). Clean grates thoroughly and oil them with a paper towel dipped in vegetable oil to prevent sticking.
  6. Remove chicken from marinade, letting excess drip off. Discard used marinade. Place chicken on the grill.
  7. Grill for 5-6 minutes per side, allowing the chicken to sear without moving it too much. Brush with fresh marinade if desired (ensure it is clean/reserved).

Notes
