A quick and easy weeknight dinner featuring tender sirloin steak bites seared in a skillet and tossed in a rich, savory cowboy butter sauce made with garlic, parsley, and spicy brown mustard.

- 1.5 lbs sirloin or ribeye steak, cut into 1-inch cubes
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, finely chopped

- 1/4 teaspoon cayenne pepper
- Kosher salt and freshly cracked black pepper, to taste
- 1 tablespoon high smoke point oil (e.g., avocado or canola oil)
Instructions
- Take the steak out of the fridge 15-20 minutes before cooking. Pat the cubes completely dry with paper towels and season generously with kosher salt and black pepper.
- Place a large skillet over medium-high heat for 2-3 minutes until hot. Add 1 tablespoon of oil and swirl until it shimmers.
- Add steak cubes to the pan in a single layer, ensuring not to overcrowd. Sear undisturbed for 2-3 minutes to develop a brown crust.
- Flip the steak bites and cook for another 2-3 minutes until browned and slightly firm. Remove steak from the pan to a plate, leaving the fond in the pan.
- Reduce heat to medium-low. Add 4 tablespoons of butter to the pan. Once melted, add minced garlic, chopped parsley, spicy brown mustard, dried oregano, and cayenne pepper. Whisk constantly for 1-2 minutes until fragrant.
- Return the steak bites and any accumulated juices to the pan. Toss gently in the cowboy butter sauce for 1-2 minutes to reheat and coat the meat.
- Remove from heat immediately and serve hot, garnished with extra parsley if desired.
Notes
Pat the steak dry before seasoning to ensure a good sear. Do not overcrowd the pan, as this will steam the meat instead of searing it. Watch the garlic closely when making the sauce to prevent burning, which can make the sauce bitter. For a lighter option, reduce butter to 2 tablespoons and add a splash of beef broth.
