  • 1 lb flank steak, sliced thinly against the grain
  • 1 large yellow onion, sliced into thin strips
  • 1 tbsp cornstarch
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil (divided)
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1 tbsp water
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp sesame oil (optional)

Instructions

  1. Slice the flank steak thinly against the grain and place in a bowl. Toss with 1 tablespoon of cornstarch and a pinch of black pepper. Let sit for 10 minutes.
  2. Slice the onions into thin strips. Mince the garlic and grate the ginger.
  3. In a small bowl, whisk together soy sauce, oyster sauce, sugar, sesame oil (if using), and water until the sugar is dissolved.
  4. Heat a large skillet or wok over medium-high heat for 2 minutes. Add 1 tablespoon of oil and swirl to coat.
  5. Add the beef in a single layer (cook in batches if necessary). Sear for 1-2 minutes per side until browned. Remove beef from pan and set aside.
  6. Add the remaining 1 tablespoon of oil to the pan. Add onions and cook for 3-4 minutes until soft and golden.
  7. Add garlic and ginger to the onions; cook for 30 seconds until fragrant.
  8. Return the beef to the pan. Pour the sauce mixture over everything and toss vigorously for 1-2 minutes until the sauce thickens and coats the ingredients.
  9. Serve immediately over steamed rice or noodles.

Notes

Slice beef against the grain for maximum tenderness. Do not overcrowd the pan when searing beef to ensure a good crust rather than steaming. If using gluten-free requirements, swap soy sauce for tamari and ensure oyster sauce is gluten-free.
