- 1 lb jumbo or extra-large shrimp, peeled and deveined
- 1 tbsp cornstarch
- Salt and pepper to taste
- 4–5 cloves garlic, finely minced
- 3 tbsp honey
- 2 tbsp soy sauce (or tamari for gluten-free)
- 2 tbsp low-sodium chicken broth
- 1 tbsp fresh lemon juice
- 1/4 tsp red pepper flakes
- 1 tsp sesame oil
- 1 cup cooked jasmine rice, quinoa, or cauliflower rice
- 2 stalks green onions, sliced
- Sesame seeds for garnish
- 1 tbsp cooking oil for searing
Instructions
- Pat shrimp dry with paper towels and toss with cornstarch, salt, and pepper. Let sit for 5 minutes.
- In a small bowl, whisk together honey, soy sauce, chicken broth, lemon juice, red pepper flakes, and minced garlic.
- Cook rice or quinoa according to package directions and keep warm.
- Heat a large skillet over medium-high heat with oil. Sear shrimp in a single layer for 1-2 minutes per side until pink and crispy. Remove to a plate.
- Reduce heat to medium. Pour sauce mixture into the pan and stir constantly for 1-2 minutes until thickened and glossy.
- Return shrimp to the pan, toss to coat in sauce, and drizzle with sesame oil. Remove from heat immediately.
- Assemble bowls by spooning hot rice into bowls, topping with shrimp, and garnishing with green onions and sesame seeds.
Notes
Ensure shrimp are completely dry before searing to prevent steaming. Do not walk away from the sauce while it bubbles as honey burns quickly. Use medium heat for the sauce and high heat for searing shrimp. Thaw frozen shrimp completely in cold water before use.
