Ingredients
- Boneless, skinless chicken thighs (cut into 1-inch cubes)
- Wooden skewers (soaked in water for 30 minutes)
- Honey
- Fresh garlic (minced, 4-5 cloves)
- Low-sodium soy sauce
- Rice vinegar
- Fresh ginger (grated, 1 teaspoon)
- Sesame oil (1 teaspoon)
- Cornstarch (mixed with cold water to form a slurry)
- Red pepper flakes (optional)
- Red onion (cut into large chunks)
- Bell peppers (any color, cut into chunks)
- Yellow squash (sliced into thick rounds)
- Olive oil (for brushing)
- Salt and black pepper
Instructions
- Soak wooden skewers in warm water for at least 30 minutes to prevent burning.
- Preheat grill to medium-high heat (around 400°F / 200°C).
- Pat chicken thighs dry and cut into uniform 1-inch cubes.
- In a small saucepan, combine honey, garlic, soy sauce, rice vinegar, ginger, sesame oil, and red pepper flakes. Simmer for 2-3 minutes until slightly thickened.
- Remove sauce from heat and stir in cornstarch slurry. Cook for one more minute until glossy, then let cool completely.
- Cut red onion, bell peppers, and yellow squash into 1-inch chunks.
- Thread chicken and vegetables onto skewers, alternating ingredients and leaving space between pieces.
- Lightly brush assembled kabobs with olive oil and season with salt and black pepper.
- Grill kabobs for 4-5 minutes per side until char marks appear.
- In the last 2 minutes of cooking, brush generously with the honey garlic glaze. Apply another coat if needed.
- Cook until chicken reaches an internal temperature of 165°F (74°C).
- Remove from grill and let rest for 5 minutes before serving.
Notes
Ensure chicken pieces are cut uniformly for even cooking. Do not skip soaking the skewers. Apply the glaze only in the last few minutes of grilling to prevent burning due to the sugar content. Let the meat rest for 5 minutes to retain juices. For a gluten-free version, substitute soy sauce with tamari or coconut aminos.
