Description
A simple, 5-ingredient comfort food casserole that combines savory cheddar cheese with sweet corn and cornmeal. It features a crispy top and soft, cheesy interior, perfect for family dinners or potlucks.
Ingredients
Scale
- 1 cup yellow cornmeal (medium-grind)
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups shredded cheddar cheese
- 3 large eggs (room temperature)
- 1 cup milk (whole or buttermilk)
- 1/2 cup melted butter
- 1 cup canned corn (drained)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large mixing bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together eggs, milk, and melted butter until smooth.
- Pour wet ingredients into dry ingredients and stir gently with a rubber spatula until just combined; do not overmix.
- Fold in shredded cheddar cheese and drained corn until evenly distributed.
- Pour batter into the prepared baking dish and spread evenly.
- Bake for 30-35 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let cool for 5-10 minutes before slicing and serving warm.
Notes
Do not overmix the batter to avoid a tough texture. Use room temperature eggs for better emulsification. If the top browns too quickly, tent with aluminum foil. Can be made ahead by refrigerating the batter overnight; add a few minutes to baking time if cold.
