  • 1 pound jumbo shrimp, peeled and deveined
  • 1 cup instant couscous
  • 1 cup low-sodium vegetable broth
  • 3 tablespoons extra virgin olive oil
  • 1 large red bell pepper, diced
  • 1 medium zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 large lemon, juiced and zested
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Tear off four large sheets of heavy-duty aluminum foil (about 18 inches long) and lightly brush the center of each with olive oil.
  2. Pat shrimp dry and toss with 1 tablespoon olive oil, half the garlic, salt, and pepper. Let marinate for 5 minutes.
  3. Dice red bell pepper, zucchini, and tomatoes into uniform 1/4 inch cubes.
  4. Create a mound of chopped vegetables in the center of each foil sheet to form a bed.
  5. Sprinkle instant couscous evenly over the vegetable bed.
  6. Ladle 1/4 cup warm vegetable broth over the couscous on each pack.
  7. Place 4-5 shrimp on top of the couscous. Sprinkle with remaining garlic, red pepper flakes, and lemon zest.
  8. Seal the foil packets tightly, leaving a small air pocket for steam expansion.
  9. Preheat grill to medium-high heat (400°F). Place packs on grates, close lid, and cook for 10-12 minutes.
  10. Remove from grill and let rest for 2-3 minutes. Open carefully, garnish with parsley and lemon juice, and serve.

Notes

Use heavy-duty foil to prevent tearing. Ensure vegetables are cut uniformly for even cooking. Do not overcook shrimp; they are done when opaque and pink. Resting the packs allows couscous to finish absorbing moisture. Can be substituted with chicken or made vegan with chickpeas/tofu.
