  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 large red onion, cut into 1-inch squares
  • 1 large red bell pepper, cut into 1-inch squares
  • 1 large green bell pepper, cut into 1-inch squares
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 8 to 10 wooden skewers, soaked in water for 30 minutes

Instructions

  1. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  2. Pat chicken breasts dry and cut into uniform 1-inch cubes. Place in a large mixing bowl.
  3. In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, parsley, salt, and black pepper until emulsified.
  4. Pour marinade over chicken and toss to coat evenly. Cover and refrigerate for 30 minutes to 4 hours.
  5. While chicken marinates, wash and chop bell peppers and red onion into 1-inch squares.
  6. Preheat grill to medium-high heat (400°F-450°F). Clean grates and lightly oil them to prevent sticking.
  7. Thread chicken and vegetables onto skewers, alternating pieces and leaving small gaps for heat circulation.
  8. Grill skewers for 10-12 minutes, turning every 3-4 minutes, until chicken reaches an internal temperature of 165°F.
  9. Remove from grill and let rest for 5 minutes before serving.

Notes

Ensure chicken and vegetables are cut into uniform 1-inch pieces for even cooking. Do not overcrowd the grill to avoid steaming the meat. If using metal skewers, they do not need soaking but may get hot during cooking. For best texture, do not marinate longer than 24 hours as the acid can break down the meat.
