Description

A quick and healthy weeknight meal featuring warm, spiced grilled chicken, creamy mashed avocado, and a crisp red cabbage slaw wrapped in a warm tortilla.

  • 2 large boneless, skinless chicken breasts
  • 2 ripe avocados
  • 4 large flour tortillas
  • 1 cup shredded red cabbage
  • 1/2 small red onion, thinly sliced
  • 3 limes (juiced)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt (plus extra for slaw)
  • 1 tbsp olive oil

Instructions

  1. Place chicken breasts between plastic wrap or in a zip-top bag and pound to an even 1/2-inch thickness.
  2. In a small bowl, mix chili powder, cumin, garlic powder, and salt. Sprinkle evenly over both sides of the chicken and rub in. Let sit for 5 minutes.
  3. In a medium bowl, combine shredded red cabbage and sliced red onion. Squeeze juice of 1 lime over vegetables, add a pinch of salt, and toss. Set aside.
  4. Heat a large skillet over medium-high heat for 2 minutes. Add olive oil and swirl to coat.
  5. Cook chicken in the hot pan for 6-7 minutes on the first side until golden brown. Flip and cook for another 5-6 minutes until internal temperature reaches 165°F. Remove and let rest for 5 minutes.
  6. While chicken rests, slice avocados, remove pits, and mash flesh with a fork. Stir in juice of 1 lime and a pinch of salt.
  7. Warm tortillas in the same pan for 30 seconds per side. Stack and cover with a towel to keep warm.
  8. To assemble, lay a tortilla flat, spread mashed avocado down the center, top with sliced chicken strips, and add the cabbage slaw. Roll tightly, tucking in sides, and cut in half diagonally. Serve immediately.

Notes

Pound chicken evenly for consistent cooking. Rest chicken for 5 minutes to retain juices. Use fresh lime juice to prevent avocado browning. Store components separately if meal prepping; do not assemble wraps ahead of time as tortillas will become soggy. Avocados should be added right before serving.
