Garlic Herb Kabob Marinade: 5-Step Perfect Grilled Kabobs

  • Author: jonathan_evans
  • Total Time: 45 minutes
  • Yield: 6-8 servings 1x

Description

A versatile and easy-to-make garlic herb marinade that transforms chicken, beef, or tofu into juicy, flavorful grilled kabobs. Perfect for summer cookouts with simple pantry ingredients.

Ingredients

Scale
  • 1/2 cup extra virgin olive oil
  • 68 cloves fresh garlic, minced
  • 1/4 cup fresh lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 teaspoon sugar or honey
  • Boneless, skinless chicken thighs or beef (cut into 1-inch cubes)
  • Bell peppers and onions (cut into chunks)

Instructions

  1. In a medium mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, parsley, red pepper flakes, salt, black pepper, and honey. Whisk vigorously until emulsified and uniform.
  2. Cut chicken or beef into uniform 1-inch cubes. Place meat in a resealable plastic bag and pour half of the marinade over it. Seal the bag, removing air, and massage to coat evenly. Refrigerate for 30 minutes to 4 hours.
  3. Wash and chop bell peppers and onions into chunks similar in size to the meat. Toss vegetables in the remaining marinade and set aside.
  4. Preheat grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes. Thread meat and vegetables onto skewers, leaving small spaces between pieces.
  5. Grill kabobs for 4-5 minutes on the first side, then flip and cook for another 4-5 minutes. Rotate 90 degrees for cross-hatch marks if desired. Cook until internal temperature reaches 165°F for chicken or 145°F for beef. Rest for 5 minutes before serving.

Notes

Do not marinate for more than 24 hours as the acid can break down the meat. Ensure meat cubes are uniform for even cooking. Soak wooden skewers to prevent burning. Let meat rest after grilling to retain juices.
