Description
A quick and easy weeknight dinner featuring seared shrimp and mixed vegetables in a rich garlic butter sauce, finished with a zesty lemon squeeze.

- 1 pound large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 cups mixed vegetables (bell peppers, zucchini, snap peas)
- 1/4 cup dry white wine (or chicken broth)
- 1/4 cup low-sodium chicken broth
- 1 large lemon (juice and zest)
- 1/2 teaspoon red pepper flakes
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Thaw frozen shrimp in cold water if necessary, then drain and pat dry thoroughly with paper towels. Season lightly with salt and pepper.
- Chop vegetables into uniform sizes. Keep them ready before cooking.
- Heat a large skillet over medium-high heat. Add 2 tablespoons of butter and wait until it foams.
- Add garlic and red pepper flakes, cooking for 30 seconds until fragrant but not brown.
- Add harder vegetables first and cook for 2-3 minutes, then add softer veggies and cook for another 2-3 minutes until tender-crisp. Remove veggies from the pan and set aside.
- In the same pan, add remaining 2 tablespoons of butter. Once melted, add shrimp in a single layer.
- Cook shrimp for 1-2 minutes per side until pink and opaque (C-shape).
- Return vegetables to the pan. Pour in white wine and chicken broth, scraping up brown bits from the bottom.
- Simmer for 1 minute to reduce slightly. Stir in lemon juice and parsley.
- Taste and adjust seasoning. Serve immediately with crusty bread or rice.
Notes
Pat shrimp dry thoroughly to ensure a good sear rather than steaming. Do not overcrowd the pan when cooking shrimp. Deglaze the pan with wine or broth to capture the flavorful brown bits (fond). Serve immediately for best texture.
