- 4 large yellow onions, sliced into half-moons
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)
- 3 cups low-sodium beef broth
- 12 oz uncooked pasta (penne, rigatoni, or farfalle)
- 1/2 cup heavy cream
- 1 cup sharp Gruyère cheese, freshly grated
- 1/2 cup Parmesan cheese, freshly grated
- 1 teaspoon dried thyme
- 1 teaspoon Worcestershire sauce
- Salt and black pepper to taste
Instructions
- Slice the onions into thin half-moons.
- Melt butter in a large pot over medium heat. Add onions and a pinch of salt, cooking for 10-15 minutes until golden brown and soft.
- Add minced garlic and dried thyme, stirring constantly for 1 minute until fragrant.
- Pour in white wine to deglaze the pot, scraping up browned bits, and simmer for 2 minutes.
- Add beef broth, uncooked pasta, and Worcestershire sauce. Stir to submerge pasta and bring to a boil.
- Reduce heat to medium-low and simmer uncovered for 10-12 minutes, stirring every 3-4 minutes, until pasta is al dente and liquid has reduced.
- Remove pot from heat and stir in heavy cream.
- Gradually stir in grated Gruyère and Parmesan cheese until melted and smooth.
- Season with salt and black pepper to taste and serve immediately.
Notes
Do not skip browning the onions for deep flavor. Use freshly grated cheese for smooth melting. If the sauce gets too thick, add a splash of broth or water. Remove from heat before adding dairy to prevent separation.
