  • 1 lb (450g) 80/20 ground beef
  • 3 medium bell peppers (mix of red, yellow, green), diced
  • 1 medium white onion, finely diced
  • 3 cloves garlic, freshly minced
  • 1 cup uncooked long grain white rice
  • 2 cups (480ml) low-sodium chicken broth
  • 1 packet (or 2 tbsp) taco seasoning
  • 2 tbsp fresh lime juice
  • 1.5 cups (170g) shredded Mexican blend cheese
  • 1/4 cup fresh cilantro, chopped
  • Optional: Fresh jalapeños or red pepper flakes for heat

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with cooking spray or olive oil.
  2. In a medium saucepan, combine uncooked rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until liquid is absorbed. Fluff with a fork and set aside.
  3. Heat a large skillet over medium-high heat. Add ground beef, breaking it up with a wooden spoon. Cook until browned and no pink remains. Drain excess fat if necessary.
  4. To the skillet with the beef, add diced onions and peppers. Sauté for 2-3 minutes until onions are translucent and peppers soften. Add minced garlic and taco seasoning; stir constantly for 30 seconds.
  5. Add the cooked rice to the skillet. Stir well to combine. Remove from heat and stir in lime juice and half of the shredded cheese.
  6. Pour the mixture into the prepared baking dish and spread evenly. Sprinkle remaining cheese over the top.
  7. Bake for 15-20 minutes until cheese is bubbly and slightly golden.
  8. Remove from oven and let rest for 5 minutes. Garnish with fresh cilantro and extra lime juice before serving.

Notes

For best texture, ensure beef is drained well to prevent a greasy casserole. Sautéing the peppers first ensures they are tender rather than tough. If using leftover rice, reduce baking time slightly. For a lighter option, substitute ground turkey or chicken. For a vegetarian version, use lentils or black beans.
