A quick and flavorful twist on traditional stuffed peppers, this casserole combines seasoned ground beef, rice, bell peppers, and cheese in a single dish for a comforting weeknight meal.

- 1 lb (450g) 80/20 ground beef
- 3 medium bell peppers (mix of red, yellow, green), diced
- 1 medium white onion, finely diced
- 3 cloves garlic, freshly minced
- 1 cup uncooked long grain white rice
- 2 cups (480ml) low-sodium chicken broth
- 1 packet (or 2 tbsp) taco seasoning
- 2 tbsp fresh lime juice
- 1.5 cups (170g) shredded Mexican blend cheese
- 1/4 cup fresh cilantro, chopped
- Optional: Fresh jalapeños or red pepper flakes for heat
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with cooking spray or olive oil.
- In a medium saucepan, combine uncooked rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until liquid is absorbed. Fluff with a fork and set aside.
- Heat a large skillet over medium-high heat. Add ground beef, breaking it up with a wooden spoon. Cook until browned and no pink remains. Drain excess fat if necessary.
- To the skillet with the beef, add diced onions and peppers. Sauté for 2-3 minutes until onions are translucent and peppers soften. Add minced garlic and taco seasoning; stir constantly for 30 seconds.
- Add the cooked rice to the skillet. Stir well to combine. Remove from heat and stir in lime juice and half of the shredded cheese.
- Pour the mixture into the prepared baking dish and spread evenly. Sprinkle remaining cheese over the top.
- Bake for 15-20 minutes until cheese is bubbly and slightly golden.
- Remove from oven and let rest for 5 minutes. Garnish with fresh cilantro and extra lime juice before serving.
Notes
For best texture, ensure beef is drained well to prevent a greasy casserole. Sautéing the peppers first ensures they are tender rather than tough. If using leftover rice, reduce baking time slightly. For a lighter option, substitute ground turkey or chicken. For a vegetarian version, use lentils or black beans.
