Description

These fluffy, pillowy no-yeast cinnamon rolls are made with simple pantry staples and baked in under an hour. They feature a rich cinnamon swirl and a creamy cream cheese glaze, offering bakery-quality results without the hassle of yeast.

Ingredients

Scale
  • 2 ½ cups (315g) all-purpose flour, sifted
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup (50g) granulated sugar
  • 1 cup (240ml) milk
  • ¼ cup (55g) melted butter
  • 1 large egg, room temperature
  • ½ cup (115g) unsalted butter, softened (for filling)
  • ¾ cup (150g) brown sugar
  • 2 tablespoons ground cinnamon
  • 4 oz (115g) cream cheese, softened (for glaze)
  • 2 tablespoons butter, softened (for glaze)
  • 1 cup (120g) powdered sugar, sifted
  • 12 tablespoons milk (for glaze)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and granulated sugar.
  3. In a separate bowl, combine milk, melted butter, and egg; whisk until emulsified.
  4. Pour wet ingredients into dry ingredients and fold with a rubber spatula until just combined. Do not overmix.
  5. Let the batter rest for 5-10 minutes.
  6. Mix softened butter, brown sugar, and cinnamon to form a paste.
  7. Spread the rested batter evenly into the prepared baking dish.
  8. Sprinkle the cinnamon-sugar mixture over the batter and gently swirl with a knife or bench scraper.
  9. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  10. While baking, beat cream cheese and butter until smooth, then add powdered sugar, vanilla, and milk to make the glaze.
  11. Let rolls cool for 5 minutes, then spoon the glaze over the warm rolls.
  12. Serve immediately.

Notes

Do not overmix the batter to avoid tough rolls. Ensure baking powder is fresh for proper rise. Let rolls cool for 5 minutes before glazing to prevent the glaze from melting into the dough. For gluten-free option, use a 1:1 gluten-free flour blend.
