- 1–2 lbs pork tenderloin
- 1 packet dry ranch dressing mix
- 1 packet au jus gravy mix
- 1 jar pepperoncini peppers (sliced)
- Juice from the pepperoncini jar
- 1 cup low-sodium chicken broth
- 1 stick unsalted butter
- 2 tablespoons cornstarch mixed with 2 tablespoons cold water (for slurry)
Instructions
- Rinse the pork tenderloin under cold water and pat dry. Trim off any silver skin.
- Place the pork tenderloin in a 4- to 6-quart slow cooker. If using two tenderloins, place them side by side.
- Sprinkle the dry ranch dressing mix over the pork.
- Pour the au jus gravy mix over the pork.
- Slice the pepperoncini peppers into rings directly over the pork and pour the jar juice over everything.
- Add the chicken broth and place the stick of butter on top.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the internal temperature reaches 145°F (63°C).
- Remove the pork from the slow cooker and let it rest for 10 minutes.
- While the pork rests, turn the slow cooker to high. Whisk the cornstarch slurry into the hot liquid.
- Stir constantly until the gravy thickens to your desired consistency.
- Slice the pork into medallions and serve with the gravy.
Notes
Pork tenderloin is lean and can dry out if overcooked; check temperature at the 6-hour mark on low. Letting the meat rest is crucial for juiciness. If the gravy is too salty, add a splash of broth or lemon juice. For a lighter version, use cooking spray instead of butter.
