- Rice paper wrappers (dry)
- Neutral frying oil (vegetable, canola, or peanut)
- 1/2 cucumber, julienned
- Carrots, thinly matchsticked
- Fresh cilantro
- Fresh mint
- Cooked shrimp or shredded chicken (optional)
- Cooked rice vermicelli (optional)
- 3 tablespoons soy sauce (low-sodium)
- 2 tablespoons lime juice (freshly squeezed)
- 1 teaspoon sugar
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- Pinch of red chili flakes
- 1–2 tablespoons water
Instructions
- Wash and dry vegetables thoroughly. Julienne cucumber and carrots, chop herbs, and prepare protein/noodles if using. Place in separate bowls.
- In a small bowl, whisk together soy sauce, lime juice, sugar, garlic, ginger, and chili flakes. Add water to thin and adjust seasoning to taste. Set aside.
- Pour about 2 inches of oil into a deep pan and heat over medium-high heat to 350°F (175°C).
- Carefully place one dry rice paper wrapper into the hot oil. Fry for 20-30 seconds, flipping once, until golden and crisp. Remove and drain on a paper towel.
- Repeat frying process with remaining wrappers.
- Place a warm fried wrapper on a plate. Add a small amount of vegetables and protein to the center. Fold sides in and roll tightly.
- Serve immediately with the dipping sauce on the side.
Notes
Ensure wrappers are completely dry before frying to prevent splattering and ensure crispiness. Do not overfill the rolls to prevent bursting. Keep oil temperature steady at 350°F. Serve immediately for best texture. Leftover sauce can be stored for up to 3 days.
