Crispy Oven Baked Chicken Wings: 20-Min Easy Zesty Heat

  • Author: jonathan_evans
  • Total Time: 55 minutes
  • Yield: 4 servings 1x

Description

Achieve restaurant-style crispy chicken wings in the oven using a baking powder and air-drying technique, finished with a bright, zesty heat sauce.

Ingredients

Scale
  • 2 pounds whole chicken wings, separated at joints
  • 1 tablespoon aluminum-free baking powder
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons hot sauce (e.g., Frank’s RedHot)
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat oven to 425°F (220°C). Line a rimmed baking sheet with foil and place a wire rack on top.
  2. Pat chicken wings completely dry with paper towels to remove surface moisture.
  3. For extra crispiness, place dried wings on a plate in the refrigerator, uncovered, for at least 1 hour or up to 24 hours.
  4. In a small bowl, mix baking powder, salt, garlic powder, onion powder, paprika, and black pepper.
  5. Toss wings in the spice mixture until evenly coated.
  6. Arrange wings in a single layer on the wire rack, ensuring they are not touching.
  7. Bake for 40-45 minutes, flipping halfway through if not using a rack, until skin is crispy and internal temperature reaches 165°F.
  8. While wings bake, melt butter in a small saucepan over low heat.
  9. Whisk in hot sauce, soy sauce, lemon juice, honey, and red pepper flakes. Simmer for 1-2 minutes.
  10. Transfer hot wings to a large bowl, pour sauce over, and toss to coat.
  11. Garnish with fresh parsley and serve immediately.

Notes

Ensure wings are completely dry before seasoning to prevent steaming. Do not substitute baking powder with baking soda as it can leave a metallic taste. For best results, air dry wings in the fridge overnight. Reheat leftovers in the oven at 400°F to maintain crispiness; avoid microwaving.
