Description
A quick, high-protein, low-carb wrap featuring seared chicken breasts with a bold garlic butter sauce, perfect for keto and busy weeknights.
Ingredients
Scale
- 1 lb (450g) boneless, skinless chicken breasts
- 4–5 cloves fresh garlic, minced
- 2 tablespoons extra virgin olive oil
- 2 tablespoons unsalted butter
- 6–8 low carb wraps (almond or coconut flour) or large romaine lettuce leaves
- 1/2 cup shredded cheddar or Mexican blend cheese
- 1 cup packed spinach or arugula
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp smoked paprika
Instructions
- Place chicken breasts between plastic wrap or in a zip-top bag and pound to 1/2 inch thickness. Season both sides with salt, pepper, and smoked paprika.
- Heat olive oil in a cast iron skillet or non-stick pan over medium-high heat until shimmering.
- Sear chicken in the hot pan for 2-3 minutes without moving to develop a golden crust. Flip and cook for another 2-3 minutes until internal temperature reaches 165°F (74°C). Remove chicken and let rest.
- Reduce heat to medium. Add butter to the same pan. Once melted, add minced garlic and stir constantly for 30-60 seconds until fragrant, being careful not to burn.
- Warm low-carb wraps in the microwave for 10 seconds or in a dry pan. Place spinach on the wrap, slice the rested chicken, and layer it on top. Drizzle with garlic butter, add cheese, and roll up tightly.
Notes
Do not skip resting the chicken to retain juices. Control heat when adding garlic to prevent burning. Warm wraps to prevent tearing. Store chicken and sauce separately from wraps to avoid sogginess.
