Description

A quick and flavorful 30-minute dinner featuring crispy smashed chicken thighs marinated in pickle juice, coated in a ranch-pickle crust, and served in warm tortillas with fresh toppings.


Ingredients

  • Boneless, skinless chicken thighs
  • Dill pickle chips (about 1 cup)
  • Pickle juice (from jar)
  • All-purpose flour
  • Dry ranch dressing mix (1 packet)
  • Large eggs
  • Milk (splash)
  • Oil for frying (avocado, light olive, or vegetable)
  • Small corn or flour tortillas
  • Shredded lettuce (Iceberg or romaine)
  • Shredded cheese (mild cheddar or Mexican blend)
  • Sour cream or Greek yogurt
  • Hot sauce (optional)

Instructions

  1. Pound chicken thighs between plastic wrap or in a bag until about 1/4 inch thick.
  2. Submerge chicken in pickle juice and marinate for at least 15 minutes (up to 1 hour).
  3. Set up three shallow bowls: Bowl 1 with flour and half the ranch mix; Bowl 2 with whisked eggs, milk, and remaining ranch mix; Bowl 3 with remaining ranch mix and finely chopped pickles.
  4. Preheat skillet over medium-high heat with 1/4 inch of oil.
  5. Remove chicken from brine, pat dry slightly, and dredge in flour mixture.
  6. Dip chicken in egg wash, then press into the pickle-ranch mixture to coat.
  7. Place chicken in hot skillet and cook for 3-4 minutes until golden brown.
  8. Smash chicken gently with a spatula to increase surface area and crispiness.
  9. Cook for another 3-4 minutes on the second side until internal temperature reaches 165°F (74°C).
  10. Warm tortillas in a dry skillet or microwave.
  11. Chop cooked chicken into bite-sized pieces.
  12. Assemble tacos with chicken, lettuce, cheese, sour cream/yogurt, and hot sauce.
  13. Serve immediately.

Notes

For air frying, preheat to 400°F (200°C) and cook for 10-12 minutes, flipping halfway. To prevent sogginess, assemble tacos just before serving. Leftovers can be stored in the fridge for up to 3 days and reheated in an oven or air fryer at 350°F (175°C) for 5-10 minutes to restore crispiness. Do not microwave leftovers.
