Description

A low-carb, keto-friendly casserole that replaces burger buns with crispy roasted cabbage. This one-pan meal combines seasoned ground beef, aromatic vegetables, and melted cheese for a satisfying, crunchy texture without the carbs.

  • 1 lb (450g) Ground Beef (80/20 blend)
  • 1 medium head Green Cabbage, chopped into small bite-sized pieces
  • 1 medium Yellow Onion, finely diced
  • 3 cloves Garlic, minced
  • 1 tablespoon Worcestershire Sauce
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika
  • Salt and Black Pepper, to taste
  • 1 large Egg, beaten
  • 1 cup Cheddar Cheese, shredded
  • Optional: Pickled jalapeños, fresh cilantro, or sour cream

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a 9×13 inch baking dish.
  2. Finely dice the yellow onion, remove the core from the cabbage and chop into bite-sized pieces, and mince the garlic.
  3. Heat a large skillet over medium-high heat. Add ground beef and break it up with a wooden spoon. Cook until no pink remains (5-7 minutes). Drain excess grease if desired, but leave some for flavor.
  4. Add diced onion to the beef and cook for 2-3 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  5. Remove skillet from heat. Stir in Worcestershire sauce, Dijon mustard, garlic powder, smoked paprika, salt, and pepper. Let mixture cool slightly.
  6. In a large mixing bowl, combine the cooked beef mixture with chopped cabbage and beaten egg. Mix well to coat evenly.
  7. Press the mixture firmly into the prepared baking dish and smooth the top.
  8. Sprinkle shredded cheddar cheese evenly over the top.
  9. Bake for 20-25 minutes until cheese is melted and bubbly, and cabbage edges are crisping.
  10. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra crispiness, spread the mixture in a thin, even layer. If the cabbage looks too wet after mixing, squeeze out excess moisture. If the top isn’t browning enough, broil for the last 1-2 minutes. Ensure beef is cooked thoroughly before mixing to avoid toughness. Let meat cool slightly before adding egg to prevent scrambling.
