- 2 large ripe peaches, halved and pitted
- 4 cups mixed greens (arugula or spring mix)
- 1/4 cup walnuts, toasted
- 2 tablespoons balsamic glaze
- 1/4 cup goat cheese, crumbled
Instructions
- For Crunchy Corn Salad: Combine corn, diced pepper, minced onion, cilantro, and feta in a bowl. Toss with lime juice, chili powder, and salt. Let sit for 10 minutes before serving.
- For Shredded Cabbage Slaw: Shred cabbage thinly. Whisk apple cider vinegar, honey, Dijon mustard, salt, and pepper, then slowly drizzle in vegetable oil to emulsify. Toss dressing with cabbage and carrots, massaging to soften fibers. Refrigerate for at least 30 minutes.
- For Crispy Roasted Potatoes: Parboil potato cubes for 5-7 minutes, then drain and steam dry. Toss with cornstarch, smoked paprika, garlic powder, and salt. Roast on a lined baking sheet at 425°F (220°C) for 20-25 minutes, flipping halfway, until golden and crispy.
- For Charred Broccoli: Toss broccoli florets with olive oil, salt, and red pepper flakes. Char directly on grill grates or in a hot cast-iron skillet over high heat for 3-4 minutes without moving. Finish with lemon zest and Parmesan cheese.
- For Grilled Peach Salad: Grill peach halves cut-side down for 2-3 minutes until grill marks appear. Slice into wedges. Toss mixed greens with balsamic glaze, then top with peaches, toasted walnuts, and goat cheese.
