  • Author: jonathan_evans
  • Total Time: 10 minutes
  • Yield: 2 servings 1x

Description

A revolutionary take on avocado toast featuring seared, crispy avocado halves on thick sourdough, topped with bright citrus zest, chili flakes, and optional fried eggs for a texture explosion.

Ingredients

Scale
  • 2 large ripe Hass avocados
  • 4 slices thick-cut sourdough bread
  • 2 tablespoons unsalted butter
  • 2 large eggs (optional)
  • 1 fresh lemon (zest and juice)
  • 1 fresh lime (zest and juice)
  • 1 teaspoon red pepper flakes
  • Microgreens or thinly sliced radishes for garnish
  • Sea salt and freshly cracked black pepper
  • Olive oil (for brushing bread)

Instructions

  1. Cut avocados in half, remove pits, and scoop out flesh carefully to keep shape intact.
  2. Pat avocado halves thoroughly dry with paper towels to ensure crispiness.
  3. Lightly toast sourdough slices in a toaster until golden.
  4. Brush toasted bread with a little olive oil and set aside.
  5. Heat a non-stick skillet over medium-high heat and add butter, waiting until it foams and milk solids begin to brown.
  6. Place avocado halves cut-side down in the pan, pressing gently for full contact.
  7. Cook for 2-3 minutes without touching until a golden brown crust forms.
  8. Flip avocado halves and cook the flat side for 1 minute to warm through.
  9. If using eggs, fry them sunny-side up in a separate pan until whites are set but yolks are runny.
  10. Assemble by placing crispy avocado halves on the toasted bread.
  11. Add fried egg on top if using.
  12. Zest lemon and lime over the toast, then drizzle with juice.
  13. Sprinkle with red pepper flakes, sea salt, and black pepper.
  14. Garnish with microgreens or radish slices and serve immediately.

Notes

Moisture is the enemy of crispiness; ensure avocados are completely dry before searing. Do not rush the heat; medium-high is ideal to prevent burning butter or steaming the avocado. Serve immediately as the crunch fades quickly. For a vegan version, skip the egg and optionally use a chickpea flour batter for extra crunch.
