Ingredients
- 1.5 cups long-grain white rice (basmati or jasmine)
- 3 tablespoons unsalted butter, divided
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 2.5 cups vegetable broth (low-sodium)
- 1/2 cup heavy cream
- 1.5 cups mixed vegetables (peas, carrots, corn)
- 1/4 cup fresh parsley, chopped
- 1 tablespoon fresh lemon juice
- Zest of 1 lemon

Instructions
- Rinse 1.5 cups of long-grain white rice under cold water until the water runs clear to remove excess starch. Pat dry if possible.
- Heat 2 tablespoons of butter in a medium saucepan over medium heat. Add the diced onion and cook for 3-4 minutes until translucent. Add the minced garlic and cook for 30 seconds until fragrant.
- Add the rinsed rice to the pot and stir constantly for 1-2 minutes to toast the grains until they become slightly translucent at the edges.
- Pour in the 2.5 cups of vegetable broth and bring the mixture to a boil. Reduce heat to low, cover tightly with a lid, and simmer for 15-18 minutes without lifting the lid.
- While the rice simmers, heat the remaining 1 tablespoon of butter in a small skillet over medium-high heat. Sauté the mixed vegetables for 3-4 minutes until tender-crisp.
- Remove the rice pot from heat and let it rest, covered, for 5 minutes to allow the rice to finish absorbing liquid.
- Fluff the rice with a fork. Gently fold in the sautéed vegetables and heavy cream until evenly distributed and warm.
- Remove from heat completely. Stir in the fresh lemon juice, lemon zest, chopped parsley, and red pepper flakes. Taste and adjust salt and pepper as needed.
- Serve immediately while hot, garnished with extra parsley or a lemon wedge.

Do not lift the lid while the rice is simmering to ensure proper steam absorption. Sautéing vegetables separately prevents them from becoming mushy. The lemon juice and zest are essential for balancing the richness of the cream and butter. If the rice is too hard after resting, add a splash of hot water and let sit covered for 2 minutes. If too wet, uncover to let steam escape.
