  • Author: jonathan_evans
  • Total Time: 50 minutes
  • Yield: 9 servings 1x

Description

A moist, cinnamon-swirled cake topped with a creamy, tangy cream cheese icing. This easy-to-make dessert captures the flavor of Cinnabon rolls without the complex dough-kneading process.

Ingredients

Scale
  • 2 cups all-purpose flour, sifted
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar, packed
  • 2 teaspoons ground cinnamon
  • 2 tablespoons butter, melted
  • 4 ounces cream cheese, softened
  • 2 tablespoons butter, softened
  • 1 cup powdered sugar, sifted
  • 12 teaspoons milk
  • 1/2 teaspoon vinegar or lemon juice

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat softened butter and granulated sugar until light and fluffy (2-3 minutes).
  4. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  5. Alternately add the dry ingredients and milk to the butter mixture, mixing until just combined.
  6. In a small bowl, mix brown sugar, cinnamon, and melted butter.
  7. Spread batter into the prepared pan, dot with cinnamon mixture, and swirl with a knife.
  8. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
  9. Let cake cool in the pan for 10 minutes.
  10. While cake cools, beat cream cheese and 2 tablespoons butter until smooth.
  11. Add powdered sugar, milk, and vinegar/lemon juice, beating on high until fluffy.
  12. Spread icing over the warm cake and serve slightly warm.

Notes

Ensure ingredients are at room temperature for best results. Do not overmix the batter to keep the cake tender. The vinegar in the icing adds a zesty kick that balances the sweetness. Can be made gluten-free by using a 1:1 gluten-free flour blend.
