  • Author: jonathan_evans
  • Total Time: 30 minutes
  • Yield: 16 poppers (serves 4-6) 1x

Description

Spicy, creamy, and crunchy jalapeno poppers stuffed with a rich cheese and bacon filling, topped with buttery panko breadcrumbs. These easy-to-make appetizers are perfect for game day parties and crowd-pleasing snacking.

Ingredients

Scale
  • 810 medium jalapeno peppers
  • 1 block (8 oz) full-fat cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup pepper jack cheese, shredded
  • 68 strips bacon, cooked crispy and crumbled
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 cup panko breadcrumbs
  • 2 tbsp unsalted butter, melted
  • Pinch of sea salt

Instructions

  1. Preheat oven to 400°F (200°C). If using convection, reduce to 375°F (190°C).
  2. Wash and dry jalapenos. Slice each pepper in half lengthwise, creating a ‘boat’ shape. Use a spoon to scrape out seeds and membranes. Pat dry with paper towels.
  3. Cook bacon in a skillet over medium heat until crispy. Drain on paper towels, crumble into small pieces, and set aside.
  4. In a medium bowl, combine softened cream cheese, cheddar, pepper jack, garlic powder, and onion powder. Mix until smooth. Fold in crumbled bacon.
  5. Fill each jalapeno half with the cheese mixture, arranging them cut-side up on a parchment-lined baking sheet.
  6. In a small bowl, mix panko breadcrumbs with melted butter and a pinch of sea salt. Sprinkle generously over the stuffed peppers.
  7. Bake for 15-20 minutes until peppers are tender and topping is golden brown.
  8. Remove from oven and let cool for 5 minutes before serving warm with ranch or sour cream.

Notes

Wear gloves when handling jalapenos to avoid skin irritation. Ensure cream cheese is fully softened to prevent lumps. For extra heat, leave some seeds in the peppers. Can be made ahead and refrigerated for up to 24 hours before baking.
