- 1.5 pounds skinless salmon fillets
- 2 large ripe peaches, sliced into thin wedges
- 1/4 cup bourbon
- 2 tablespoons soy sauce (low-sodium preferred)
- 1 tablespoon honey
- 1 tablespoon fresh lemon juice
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon red pepper flakes (optional)
- 2 stalks green onions, sliced
- Freshly cracked black pepper
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Wash peaches, remove pits, and slice into thin wedges. Pat dry if very juicy.
- In a small bowl, whisk together bourbon, soy sauce, honey, lemon juice, minced garlic, grated ginger, and red pepper flakes until smooth.
- Place salmon fillets on the prepared baking sheet and season tops lightly with black pepper.
- Pour about half of the marinade over the salmon, spreading it evenly. Reserve the rest for basting.
- Arrange peach wedges around and under the salmon on the baking sheet.
- Roast for 12-15 minutes. At the 6-minute mark, remove pan and brush salmon with reserved marinade.
- Cook until salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C) or 135°F (57°C) for medium.
- Remove from oven and let rest for 2-3 minutes.
- Garnish with sliced green onions and serve immediately.
Notes
Ensure salmon fillets are uniform in thickness for even cooking. If using canned peaches, drain well to avoid a watery glaze. Do not freeze the dish with the peach glaze as the texture may become mushy upon thawing. For a spicier kick, add diced jalapeño.
