Description

Ingredients

  • 1.5 pounds skinless salmon fillets
  • 2 large ripe peaches, sliced into thin wedges
  • 1/4 cup bourbon
  • 2 tablespoons soy sauce (low-sodium preferred)
  • 1 tablespoon honey
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 stalks green onions, sliced
  • Freshly cracked black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Wash peaches, remove pits, and slice into thin wedges. Pat dry if very juicy.
  3. In a small bowl, whisk together bourbon, soy sauce, honey, lemon juice, minced garlic, grated ginger, and red pepper flakes until smooth.
  4. Place salmon fillets on the prepared baking sheet and season tops lightly with black pepper.
  5. Pour about half of the marinade over the salmon, spreading it evenly. Reserve the rest for basting.
  6. Arrange peach wedges around and under the salmon on the baking sheet.
  7. Roast for 12-15 minutes. At the 6-minute mark, remove pan and brush salmon with reserved marinade.
  8. Cook until salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C) or 135°F (57°C) for medium.
  9. Remove from oven and let rest for 2-3 minutes.
  10. Garnish with sliced green onions and serve immediately.

Notes

Ensure salmon fillets are uniform in thickness for even cooking. If using canned peaches, drain well to avoid a watery glaze. Do not freeze the dish with the peach glaze as the texture may become mushy upon thawing. For a spicier kick, add diced jalapeño.
