  • ½ cup (120ml) vegetable oil
  • 2 large eggs, room temperature

  • 2 teaspoons vanilla extract
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round pan or 9×5-inch loaf pan and dust with cocoa powder.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt until no lumps remain.
  3. Pour hot brewed coffee into the dry mixture and whisk vigorously until smooth. Let the mixture sit for 5 minutes to bloom the cocoa.
  4. Whisk in vegetable oil, eggs, vanilla extract, and vinegar until just combined. Do not overmix.
  5. If using, gently fold in chocolate chips with a spatula.
