Ingredients

  • 2 lbs Ground Beef (80% lean, 20% fat)
  • Kosher Salt
  • Coarse Black Pepper
  • Onion Powder
  • Garlic Powder
  • Burger Buns (Brioche or Potato)
  • Cheese Slices (American, Cheddar, or Provolone)

Instructions

  1. Take ground beef out of the fridge and let it sit for 10 minutes to warm slightly.
  2. Gently divide beef into 6-ounce portions and form into loose balls. Do not overmix.
  3. Flatten balls into discs slightly wider than your buns. Press a small dimple in the center of each patty.
  4. Season the tops generously with salt, pepper, onion powder, and garlic powder (approx. 1/2 tsp salt per patty).
  5. Place seasoned patties on a plate and refrigerate for 15 minutes to help them hold shape.
  6. Preheat grill to high heat (450°F-500°F). Clean grates thoroughly.
  7. Lightly oil the grill grates to prevent sticking.
  8. Place patties on the grill. Do not move for 3-4 minutes to allow a sear to form.
  9. Flip burgers once. Immediately add cheese slices.
  10. Close the lid and cook for another 3-4 minutes.
  11. Check internal temperature: 145°F for medium, 160°F for well-done.
  12. Remove burgers from grill and let rest for 5 minutes to redistribute juices.
  13. Toast buns on the grill for 30 seconds per side.
  14. Assemble burgers with toppings and serve immediately.

Notes

Do not press down on the burgers while cooking, as this squeezes out juices. Keep the grill lid closed as much as possible to maintain heat. If using a cast-iron skillet instead of a grill, heat it on high until very hot and cook for 3-4 minutes per side. Leftovers can be stored in the fridge for 3-4 days or frozen uncooked for up to 3 months.
